Barbecue Catfish & Vegetables

Ingredients

  • 1⅓ tsp olive oil
  • 2 stalk celery
  • ½ small onion
  • 1 clove garlic, minced
  • 1 green or red pepper, diced
  • ½ cup vegetable patties or crumbles
  • 4 oz catfish, cubed
  • ½ vegetable broth
  • 1 tsp apple cider vinegar
  • 2 tbs barbecue sauce
  • 1 tsp prepared mustard

Instructions

  1. Saute onions& celery in oil over medium high heat until onions are browned
  2. Add garlic, green pepper, crumbled veggie patties & catfish and saute 3-5 minutes
  3. Add remaining ingredients.
  4. cover & simmer about 20 minutes.
  5. Dessert: 1 cup Grapes
