Ingredients
- 1⅓ tsp olive oil
- 2 stalk celery
- ½ small onion
- 1 clove garlic, minced
- 1 green or red pepper, diced
- ½ cup vegetable patties or crumbles
- 4 oz catfish, cubed
- ½ vegetable broth
- 1 tsp apple cider vinegar
- 2 tbs barbecue sauce
- 1 tsp prepared mustard
Instructions
- Saute onions& celery in oil over medium high heat until onions are browned
- Add garlic, green pepper, crumbled veggie patties & catfish and saute 3-5 minutes
- Add remaining ingredients.
- cover & simmer about 20 minutes.
- Dessert: 1 cup Grapes
