Scrambled Fruit Medley

Ingredients
  • ⅔ tsp Olive Oil
  • 2 soy sausages or 1 chicken sausage
  • ¼ onion, chopped
  • 1//4 green pepper , chopped
  • ¾ cup egg substitute( egg beaters)
  • Salad: 1 cup Blueberries, ¾ tbs lime juice and 12 chopped peanuts
Instructions
  1. Heat oil in non-stick pan on medium-high heat.
  2. add sausage, onions, peppers and cook until onions are translucent
  3. add eggs and scramble until eggs are firm.
  4. Plate immediately!
  5. Fruit Salad: Mix blueberries, orange, nuts and lime juice
